- 1 Packet Unsweetened Acai
- 1/2 c. Unsweetened Vanilla Almond Milk
- 2 1/2 c. Rolled Oats
- 1 c. Cononut Flake
- 1 c. Raw Almonds
- 3 Tbsp Sugar
- 1/4 c. Coconut Oil
- 1/4 c. Unsalted Almond Butter
- 1/3 c. Honey
Preheat your oven to 340 degrees. Line a sheet pan with parchment paper and set aside. Mix the oats, coconut, almonds, and sugar together in a large bowl.
In a small pan melt the coconut oil, almond butter, and honey just until combined. Pour over the dry ingredients and mix well.
Spread the granola evenly over your sheet pan. Bake for 25 minutes, stiring at the half way point to ensure even cooking. Your granola is fully cooked when it turns a crisp brown color. While your granola cools place a frozen banana, almond milk, and acai in a blender. Blend until smooth. Pour into a pineapple cup and top with homemade granola.
