To help save on costs for your wedding try making your own cake or in this case shortcakes. Having multiple options on a dessert table adds to the beauty of the table. There are always ways to whip up an easy dessert that will wow your guests and not your check book. To create a delicious and easy Blackberry Liquor Shortcake Parfait Recipe to use as mini cake bites for your wedding dessert table. You can make these with or without the liquor, and you could use any combination of berries you want to top off this delicious dessert.
- 1 Container Blackberries
- 1 Container Blueberries
- 32 oz. Vanilla Yogurt
- 1 Sarah Lee Pound Cake, store bought
- 2 Tbsp. Lemon Juice
- 1/4 c. Sugar
- 1/2 c. Blackberry Liquor
- 2 Tbsp. Triple Sec Liquor
Chop up your pound cake into small cubes. I purchased a pre-made frozen Sarah Lee pound cake. You could also make one from scratch. Mix the 32 oz Vanilla Yogurt, 2 Tbsp. Lemon Juice, and 1/4 Cup Sugar. Stir well. (You can move on to Step 2 if you are not wanting the liquor in your Blackberry Shortcake Parfait Bites.) Mix in the 1/2 C. Blackberry Liquor and 2 Tbsp. Triple Sec Liquor.
Fill the bottom 1/4 to 1/2 of the Mini Trifle Cups with the shortcake cubes. Pour your yogurt mixture over the top.
Add your berries to the top.
This Blackberry Liquor Shortcake Parfait Recipe is delicious with or without the liquor. You could make some with liquor for the adults and some without for the kiddos. You could also substitute the blackberry liquor with any other fruit flavored liquor you wish to use, and substitute the berries on top for any type of berries or fruit you prefer. Display your bite size parfaits on a white cake stand for a clean, elegant look!
