When I was a child, I would get so excited when my parents took me on a picnic. I admit, that as an adult, I get equally excited about venturing out, laying down a blanket and sharing a meal with those I love. Maybe the appeal as an adult is that I don’t really have to cook, but simply assemble some sandwiches and yummy sides. Instead of going straight for the peanut butter and jelly, go outside the picnic box a bit and make these Chicken Cordon Bleu Pitas! There are only a few ingredients, but these little pita sandwiches are packed with flavor and put a twist on a classic dish.
- 2 c. Cooked and Shredded Rotisserie Chicken
- 1/2 c. Freshly Grated Parmesan Cheese
- 1 c. Mayonnaise
- 1/4 t. Freshly Cracked Pepper
- 2 Whole Grain Pitas, Cut In Half
- 4 Thin Slices of Country Ham
- 4 Slices Baby Swiss
- Your Favorite Fruits, Vegetables, Cheese and Crackers
In a large bowl mix together chicken, parmesan cheese, pepper, and mayo.
Gently open each pita half, creating a pocket. Layer one slice of ham and one slice of cheese inside the pita pocket.
Fill with 1/4 of the chicken mixture and chill until ready to serve.
Now comes the fun part of assembling your picnic tray using the Grey Distressed Wood Nesting Trays and White Square Plates! I used the medium-sized one because it was perfect for two! I lined the tray with parchment paper and nestled the pita sandwiches in one corner. Then I filled the rest of the tray with fun vegetables, fruits, cheese cubes and crackers.
Make sure to fill your tray with things that you love to make it a bit more special!
