Chocolate Marshmallow Cookies are a soft, chewy, chocolate cake cookie with a fun marshmallow twist. Soft, melt in your mouth goodness. They are easy to make, and won't last long! I can't wait for you to whip these up and try them.
- 4 1/2 c. flour
- 1 1/2 tsp. salt
- 1 c. oil
- 2 eggs
- 1 1/3 c. milk
- 2/3 c. cocoa
- 1 1/2 tsp. baking soda
- 2 tsp. vanilla
- 30 marshmallows, large, cut in half
Mix all ingredients, except marshmallows, in a large bowl and let stand 10 minutes.
Drop mixture on greased cookie sheet. Bake at 375 degrees F for 12-15 minutes.
While the cookies are baking, take the large marshmallows and cut in half using kitchen scissors.
During the last 5 minutes of baking, remove from oven and place a marshmallow that has been cut in half on top of each cookie. Push down firmly to ensure the marshmallow won't slide off once melted.
Cool and serve.
