Since it is fall, and I wanted something delicious to share with my Friendsgiving Pie Tasting Party, I decided to doctor the recipe up a bit and give it a cinnamon twist! This recipe makes two cheesecakes which is important to know. If you only want one, you can halve the recipe…but if you want to keep your friends make two. When people hear you made this cheesecake and didn’t share with them, well let’s just say things will get pretty ugly.
- Crust (Bottom)
- 2 pkg. Cinnamon Graham Crackers
- 3/4 c. Sugar
- 1 Stick Butter Melted
- Cheesecake (Middle)
- 24 oz. Cream Cheese (3 packages)
- 4 Eggs
- 1 c. Sugar
- 1 t. Vanilla
- Sour Cream Topping (Top)
- 2 c. Sour Cream
- 1 t. Vanilla
- 1/4 c. Sugar
- 1 t. Cinnamon
Heat oven to 375. Crush graham crackers in a gallon zip lock bag and a rolling pin. Put in mixing bowl and add sugar. Mix well with a fork. Add melted butter and mix well.
Press into 2-9" pie plates or spring form pans.
Mix all ingredients with an electric mixer. Get as smooth as possible, but some lumps are okay.
Pour on top of the graham cracker crust
Bake 18-20 minutes until golden brown. Cool completely.
Mix topping ingredients together well until sugar is well incorporated.
Spread on top of cooled cheesecake.
Refrigerate until serving.
