I’m sharing my idea for Easter Egg Hunt Cupcakes that are not only yummy but fun to make with your kids! My daughter loves to bake and it’s fun to have her in the kitchen with me as we make these Funfetti cupcakes. It’s fun to send the kids on an Easter Egg Hunt to find Easter candy hidden inside these yummy cupcakes! Want to make some? Let’s get started.

Ingredients:
Yields a Dozen Cupcakes
  • 1 Box Funfetti Cake Mix
  • 3 Eggs
  • 1/2 c. Vegetable Oil
  • 1 c. Water
  • 1 c. Vanilla Icing

Preheat the oven to 350 degrees. Add eggs, vegetable oil, water and the Funfetti cake mix to a bowl. Mix on medium speed for two minutes.

Fill a cupcake pan with cupcake liners then using a 1/4 cup measuring cup, fill the liners with the cupcake mix. Bake for 23 minutes.

Remove from the oven and let cool completely on a rack. While they are cooling, you can assemble the cupcake wrappers.

Once the cupcakes are completely cool, cut out the middle of the cupcake with a knife and set the cutout piece of cake to the side.

Fill the inside of each cupcake with a different candy. We used Starburst® Jelly BeansRainbow Mix Chocolate Candy and Reese’s® Easter Eggs Chocolate Candy to fill the cupcakes. Once they are filled, put the cutout piece of cake back on top and press down on it so it fits back into the hole.

Fill an icing bag with tip with the whipped vanilla icing and top each of the cupcake with icing. Top with Bunny Ears Picks.

Now the cupcakes all look the same even though they are filled with different candy inside. This is where the fun begins. Create a fun Easter Egg Hunt Cupcake display with this Bunny Cupcake Holder topped with Mini Pastel Easter Baskets filled with Multicolor Easter Grass. Tie an Easter Egg Hunt Mylar Balloon to one of the Easter Baskets. Place one Easter Egg Hunt Cupcake in each of the Mini Easter Baskets. This would be fun to set up as dessert for your Easter dinner or your Easter parties.

Kids love being surprised by what yummy candy is hidden inside their cupcake. Have them choose a cupcake Easter basket from your display and watch as they watch with anticipation what candy is inside when they bite into their cupcakes. Super fun!
