Ingredients:
Makes 14-16 Biscuits
  • 2 c. Self-Rising Flour
  • 1 Tbsp. Baking Powder
  • 1/2 t. Baking Soda
  • 12 Tbsp. Cold Butter
  • Two Large Eggs
  • 3/4 c. Buttermilk
  • Fresh Herbs (we used sage, thyme, rosemary and parsley)
Step

To begin, combine two cups of flour with the baking soda and baking powder in a large bowl, mixing well. Cut 12 tablespoons of cold butter into small slices. Add the cold butter to the dry mixture and use a pastry blender to cut the butter into the mixture.

Once the butter is incorporated, add one beaten egg and the buttermilk. Stir until you have a good dough consistency. If the mixture is too dry, you can add a tablespoon of buttermilk at a time to help the dough form. Cover the bowl and refrigerate for at least half an hour.

While the dough is chilling, fill a small bowl with ice water and bring a small pot of water to a boil on the stove top. One sprig at a time, submerse the herbs into the boiling water for about 5 seconds (this brings out their bright green color) then immediately submerse in the ice water for about 5 seconds (this stops the cooking process). Lay flat on paper towels to dry.

Once the dough is chilled, remove it from the fridge. Preheat the oven to 400 degrees. Add a little flour to your work surface then place the dough on top. Flatten the dough with your hands until it's about 1/2-inch thick. Use a biscuit cutter to cut out the biscuits, then arrange them on a parchment paper-lined baking sheet. Once you've cut as many biscuits as you can, re-roll the dough and cut the rest.

Use a pastry brush to lightly brush the biscuits with the second beaten egg. Press the (fully dry) herbs into the dough, then brush again with another egg wash. Bake in the oven for 15 to 18 minutes, or until golden brown. Serve on a Long White Platter lined with White Marble Beverage Napkins with Foil for a pretty presentation.
