Mickey Mouse 1st Birthday Smash Cake

First Birthday Parties just aren’t complete without a smash cake! The photos and video you can get of your little one tearing into the smash cake with their hands and eating it is priceless! This Mickey Mouse Smash Cake is finished with a DIY Mickey Mouse Cake Topper to match the party decorations perfectly. The key to a smash cake is the size. I found this 6″x3″ Wilton Round Pan at my local craft store which was the perfect size.

Ingredients:
Makes 1 6-inch Cake
  • 3 c. Powdered Sugar
  • 1/3 c. Butter
  • 1 1/2 t. Vanilla
  • 3 Tbsp. Milk
  • 1 Box White Cake Mix
  • 1 1/4 c. Water
  • 1/3 c. Vegetable Oil
  • 3 Egg Whites
  • Blue Food Coloring

For the cake, separate the egg whites from the yolk into a small bowl being careful not to pierce the yolk.

In a large mixing bowl, place the boxed cake mix, 3 egg whites, 1 1/3 cup vegetable oil and 1 1/4 cup water and mix on medium for 2 minutes until well combined.

Spray the Baking Spray all over the inside of the baking pan until fully covered then pour the cake batter into the baking pan 3/4 of the way full.

Bake in 350 degree oven for 45 minutes. Check to see if it’s done by inserting a wooden skewer into the center of the cake. If it comes out cleanly, then it’s done. Remove the cake from the oven and let it cool for 10 minutes in the pan then remove the cake from the pan onto a cooling rack. Allow to cool completely.

Once the cake is completely cooled, trim off the top so that the cake is even and turn it over (cut side down) onto a white plate.

Start making the icing by mixing powdered sugar and butter in a large mixing bowl. While mixing, add 3 tablespoons of milk and 1 1/2 tsp of vanilla extract. Mix until smooth.

Add the blue food coloring one drop at a time until you reach the color you want. Mix well.

Cut the tip of the icing bag off and place a tip inside and push to the bottom of the bag. Fill the icing bag full of the icing and twist the end to secure.

Add a layer of icing to the cake and smooth it all around the top and edges. Follow with another layer. Using the piping bag, trim the top and bottom edges of the cake with icing.

Finish the cake with this DIY Mickey Mouse Cake Topper and you’re ready to place it in front of your one-year-old and watch the fun begin!
