Fall is coming and with it lots of yummy pumpkin recipes! Today I’m going to share with you my recipe for Mini Pumpkin Pudding Pies that are quick, easy and affordable to make. They are also the perfect size to serve at parties (both kids and adults love these). My kids love to make and eat these and ask for them every fall.
- 1/2 c. Pumpkin Puree
- 1 Box Cheesecake Pudding Mix (3.4 oz.)
- 1/2 c. Whipped Topping
- 1 Pack Mini Graham Cracker Crusts
- 2 c. Milk
- 1 Pack Pumpkin Icing Decorations
Combine 1/2 cup pumpkin puree, 1/2 cup whipped topping and 2 cups milk in a bowl.
Mix on medium for 2 minutes. Pudding mixture will soft set in 5 minutes.
Once set, use an ice cream scooper to place one scoop of pudding into each graham cracker crust.
Decorate the top with a pumpkin icing decoration & serve immediately.
You can make these ahead of time for your party and refrigerate them until you’re ready to serve. Be sure to add the pumpkin icing decoration right before serving.
