One of my favorite summer parties to throw has become an annual tradition and all of our friends and family look forward to almost as much as we do. A night swimming party! We invite about 5 families over around 7 pm and we swim the night away. We throw a bunch of glow sticks in the pool, have plenty of snacks and of course we have drinks! I like to keep family parties very family friendly so this year I’ll be making these Non-Alcoholic Strawberry Pina Coladas. These drinks are super dreamy, only have 4 ingredients (including ice) and are completely irresistible! You can blend them up pool side or make them a little bit in advance and just keep it in the freezer.
- 2 c. Cream of Coconut
- 4 c. Pineapple Juice
- 1 c. Fresh Strawberries, Washed and Hulled
- 3-4 c. of Ice
In a high power blender combine 4 cups pineapple juice, 2 cup cream of coconut, 1 cup strawberries and 3-4 cups of ice. Tip: Blend on high until your desired consistency. I like mine a little on the chunky side so it stays colder longer.
Pour into Neon Hurricane Glasses. Fill the cup to the top because I can guarantee that it will be all gone and your guests will be asking for seconds!
I like to garnish my drinks with fresh fruit and picks that reflect the ingredients in the recipe. I placed a strawberry through the parasol pick and then used the adorable pineapple pick as a second garnish. Super cute and could not be any easier!
