The first step to creating a great caramel apple is to wash and dry your apples to remove all the wax. This helps the caramel adhere to the apples with minimal "sliding." Another trick is, dunk each apple into boiling water to remove the wax, and dry well. Insert your candy or popsicle sticks into the center of the apples.

In a microwave safe bowl, place one bag of unwrapped caramels along with 1 Tbs water and heat slowly until completely melted.

Quickly dunk each apple into the melted caramel and place on a Silpat or parchment lined baking sheet. You will need to work quickly, as the caramel cools down and begins to thicken. You can reheat the caramel to regain the consistency you need. Place the dipped apples into the refrigerator to harden while you move on to the next step.

Place each bag of candy melts into a microwave safe bowl and heat individually until melted. I recommend doing all the milk chocolate first, and then moving on to the vanilla candy melts.

Once you have added the chocolate of your choice, begin adding your toppings while the chocolate is still soft so they will stick.
