Peppermint Whoopie Pies OH MY! Peppermint Whoopie pies are amazing…and so easy to make! We love giving peppermint whoopie pies as neighbor gifts, since they are so delicious and easy they make a perfect holiday treat. I love displaying these whoopie pies on a pretty tray and with festive napkins or plates, the pink really just pops!

Ingredients:
  • Cookie:
  • 2 Boxes Devil's Food Cake
  • 1 1/2 C. Butter Crisco
  • 4 Eggs
  • 1 C. Chocolate Chips
  • Candy Cane Pieces
  • Frosting:
  • 2 Sticks (1 Cup) Salted Butter at Room Temperature
  • 3 C. Powdered Sugar
  • 2 Tbsp. Milk or Heavy Whipping Cream
  • 2 t. Pure Vanilla Extract
  • 1/2 t. Peppermint Extract
  • 1-2 t. Red Food Coloring

Preheat oven to 375 degrees.

Mix together cake mixes, eggs and butter Crisco.

Add in chocolate chips.

Roll in balls and place on cookie sheet lined with parchment paper. Press down lightly on each ball to flatten it a bit.

Bake about 8 minutes. Don't over bake. Let cool completely before frosting.

Frosting: Mix butter and powdered sugar until creamy.

Add in vanilla, food coloring, and peppermint extract.

Add in cream or milk. Beat for 2 minutes until creamy and smooth.

Add frosting in between two cookies. About a large tablespoon. Press down just a bit and roll the sides in crushed candy canes.
