In my opinion, there’s no food or ingredient that says “fall” more than pumpkin. I am in favor of all things pumpkin (pumpkin spice hot chocolate is a current favorite!) and this may be my favorite pumpkin recipes of all time. It’s not only easy to throw together, but it’s so so yummy!
- 1 1/2 Cup Flour
- 1/2 Cup Sugar
- 2 t. Baking Powder
- 1/2 t. Salt
- 1 t. Cinnamon
- 1/2 t. Nutmeg
- 1/4 t. Allspice
- 1/2 Cup Milk
- 3/4 Cup Pumpkin Puree/Canned Pumpkin
- 1/4 Cup Butter, melted
- 1 Egg
- 1/2 Cup Milk Chocolate Chips
- 1/2 Cup White Chocolate Chips
Preheat oven to 400 degrees. Mix all ingredients, adding chocolate chips last, until just moistened.
Fill muffin cups about 3/4 full. Bake 10-15 min, or until toothpick comes out clean. Do not overcook.
While the muffins baked, my little girl, Ruby, helped me set up decorations and put together the party favors for her Harvest Playdate.
