During the hot summer months I really try to not turn my stove or oven on when I’m making a meal or desserts. I don’t like all the extra heat and try to plan accordingly when I’m trying to feed my family. There are so many great no-bake desserts out there and I’m here to tell you that this Raspberry Lemonade Pie is pretty spectacular!
- 1 Graham Cracker Crust
- 4 Cups Vanilla Ice Cream, Softened
- 1 1/2 Cups Whipped Cream, Divided
- 1/2 Cup Pink Lemonade Drink Mix (I use Country Time)
- 1/2 Cup Water
- Fresh Raspberries
In a small bowl mix together drink mix and water until sugars are dissolved.
In a large bowl mix ice cream and lemonade mix together until well combined. Fold in 1 cup of whipped cream.
Pour into graham cracker crust and smooth out evenly with an offset spatula.
Freeze for 1 hour.
With remaining whipped cream, pipe dollops along the outside edge of the pie and garnish with raspberries.
Freeze for 40 minutes and serve. I like to serve it on the Dome Cake Pedestal and add extra raspberries around the edges!
