On a hot summer day nothing beats a popsicle, especially when it’s a boozy adult treat you can enjoy with friends. I invited my girlfriends over for an afternoon happy hour to tell them all about my trip to Italy and served these with homemade raspberry limoncello boozy popsicles dipped in a refreshing glass of Prosecco. This summer drink is easy, refreshing and a nod to those carefree summer days.

Add the fresh squeezed lemon juice to the bowl. When we were in Italy we bought one of these crazy juicing contraptions after we were memorized by the vendor at the local market and all the juice he could get from one lemon. It was fun to use this little contraption because it reminded me of our trip, but you can use your favorite method to get your fresh squeezed lemon juice.
