One of our favorite quick and easy desserts to make is Rice Krispies Treats. They only take a few ingredients, a little bit of time and everyone in the family loves them. That’s why we decided to take it up a notch and make a delicious Rice Krispies Treat inspired pumpkin pie for our Peanuts Thanksgiving Party! Find out how to make your own now!
- 7 c. Rice Krispies Treat Cereal- Divided
- 4 Tbsp. Unsalted Butter-DIvided
- 1/2 t. Vanilla Extract
- 5 c. Marshmallows-Divided
- Whipped Cream
- Orange Food Coloring (Or a Mix of Red & Yellow Food Coloring)
Coat an 8 or 9 inch cake pan with cooking spray and set aside. Melt 1 1/2 Tbs. butter in a saucepan. Once it is melted, add 2 cups marshmallows and stir until melted.
Mix in 1/2 tsp. vanilla extract.
Pour in 3 cups Rice Krispies and stir until the cereal is coated in the marshmallow mixture.
Take the coated Rice Krispies and firmly press them into the outer edge of the cake pan; forming a 1-1 1/2 inch crust. This will resemble the crust of a pumpkin pie!
Now, it's time for the filling! Melt 2 1/2 Tbs. of butter in a second sauce pan and add 2 cups of marshmallows.
Add in a few drops of orange food coloring (or a few drops each of red and yellow food coloring if you don’t have any orange on hand). Mix until you’ve reached your desired color.
Stir in 4 cups of Rice Krispies and coat with the orange marshmallow mix.
Press the orange Rice Krispies Treat mixture into the center of the cake pan; creating the pumpkin pie filling.
Place a plate over top of the cake pan and flip. Your Rice Krispies Treat Pumpkin Pie should fall onto the plate with ease. Place the Rice Krispies Treat Pumpkin Pie on a cake stand and serve!
