Strawberry Mojito Cocktail

We are delighted to be kicking off the new summer series – Summer Cocktails! Summertime is here and it is time for backyard BBQs, days on the lake and neighborhood gatherings. Throughout the next few months, we will be sharing all of our favorite cocktails and drinks. Today is a new twist on the minty Mojito. Add some seasonal strawberries to the mix for a fresh and fun addition. This drink has inspired me to plant some mint in the backyard!

Ingredients:
Yields a Standard Pitcher
  • 12 Mint Leaves (plus extra for garnish)
  • 10-12 Strawberries
  • 2 Limes
  • 4-6 oz. Light Rum
  • 2 c. Club Soda
  • 1/4 c. Sugar

Hull strawberries and place at bottom of pitcher.

Add 12 mint leaves and sugar on top of strawberries.

Let the mixture sit for 5 minutes in the bottom of pitcher to release some extra juice from the strawberries.

Next, use a wooden spoon to crush the berries, mint leaves and sugar together. This will release all of the flavor and juices to make the cocktail.

Pour the rum, freshly squeezed lime juice and club soda over strawberry and mint mixture.

Pour the Mojito into four mason jars, over ice. Garnish with lime and mint.

These cocktails are served in mason jars or any tall cocktail glass. Add some colorful napkins, like these pretty floral ones and a paper straw!
