Strawberry Poke Cake Strawberry Poke Cakes is one of our favorite family recipes. We love to serve it at family parties. This recipe was a perfect dessert to make for the Kids' Garden Party we threw. What is better than fresh strawberries and delicious cake! I love how the cake looks served on the Garden Party Paper Products. How fun is that bright red gingham with the pretty strawberry cake!
- 1 Box White Cake Mix
- 2 c. Heavy Whipping Cream
- 2 c. Frozen Strawberries
- 3 oz. Strawberry Jell-O®
- 1 c. Boiling Water
- Fresh Strawberries
- 4-5 Tbsp. Powdered Sugar
Bake the cake according to directions on the box. Allow to cool 20 minutes. After the cake has cooled down a bit, poke holes over the entire top of the cake.
Make the Strawberry Jell-O® by mixing the Jell-O® mix with 1 cup boiling water. Stir until dissolved. Pour the Jell-O® mix evenly over the cake.
Make the whipped cream by whipping heavy whipping cream until firm. Add in 4-5 tablespoons of powdered sugar. Add more for a sweeter cream.
Puree the frozen strawberries in a blender. Pour the pureed strawberries into the homemade whipped cream. Mix well. This makes a more tart strawberry whipped cream topping.
Spread the strawberry whipped topping evenly over the cake.
Garnish with fresh strawberries and serve!
