These mini pancake stacks make a delicious addition to your wedding dessert station. They look elegant, taste great and even better there is no cooking required. I love how quick and easy they are to whip up and how the gorgeous jewel tone berry colors pop on my Elegant Navy & Purple Wedding dessert table.
- 1/2 a pint of Whipping Cream
- 1 Box of Organic Dollar Pancakes
- 1 Tbs. of Powered sugar
- 1 pinch of Cornstarch
- 1 pint of Blueberries
- 1 pint of Blackberries
- 1 pint of Raspberries
- Mint Leaves
In preparation for stacking this bite-sized dessert, whip the cream. For sweetening, add in powdered sugar. Then add a pinch of cornstarch prevents the weeping that can occur when whipped cream stands in the stack on your dessert table.
Place the first dollar pancake onto a Mini Square Plastic Dessert Plate. This will make the dessert stack easy for your guests to pick up and add to their plate.
Next spread a layer of whipped cream onto the dollar pancake.
Place the first layer of berries onto the cream.
Add the second pancake to the stack.
Spread the second layer of cream onto the pancake.
Place another layer of berries. Select a different berry from the first layer. There are several combinations to choose from.
Place the last pancake on top of the berries. Then using a sieve add a fine layer of confectioners sugar.
Place a sprig of mint to the top of the stack. You now have a perfect bite-sized dessert treat for your guests to enjoy! Serve on Mini Appetizer Square Appetizer Plates for guests to pick up easily. These can then be laid out on a larger serving tray.
