Fruit infused cocktails are one of our most favorite things to sip and enjoy and when those cocktails coordinate with the color scheme of our events, we couldn't be happier! That's why this blueberry pineapple champagne spritzer is a perfect pairing with our recent Monet inspired wedding. It's lovely purple hue is an extraordinary complement to our palette of blues and greens and it's refreshingly, delicious taste will have you craving it Time and time again.
- 1 c. Blueberries
- 1 c. Pineapple Juice
- 5 Mint Leaves
- Champagne
Add the blueberries, pineapple juice and mint leaves into blender and blend on medium speed until all the ingredients are pureéd into a pretty purple juice.
Pour the blended liquid through a strainer and add 2-3 Tbsp of the strained fruit pureé into a gold scalloped champagne flute.
Top with champagne.
Serve and enjoy!
