These pecan bourbon balls are rich, smooth, and utterly decadent. It's the perfect Southern delicacy for a Derby Party.
- 3/4 c. Chopped Pecans
- 3 Tbsp. Woodford Reserve Kentucky Bourbon
- 1/4 c. Butter Softened
- 3 c. Powdered Sugar
- 16 oz. Semi-Sweet Chocolate
- 3 Tbsp. Cocoa
- 3 Tbsp. Shortening
Mix chopped pecans and bourbon in a bowl and allow to soak for an hour.
Cream butter, sugar and cocoa together with an electric mixer until smooth.
Add pecan-bourbon mixture and mix. If the mixture is too soft, add a little more powdered sugar.
Use a small ice cream scoop or a teaspoon measuring spoon to form balls that are slightly larger than 1-inch. Place them on a baking sheet lined with parchment paper and refrigerate until firm, at least 1 hour.
Melt chocolate chips and shortening in a double-boiler saucepan over low heat, stirring constantly. Once smooth, start dipping the balls into the chocolate mixture. Place back on baking sheet and top with a pecan.
