- Yellow Cake Mix
- Two 8 oz sticks butter, unsalted, melted in seperate bowls
- One block cream cheese
- 1 Half Cup Confectioners Sugar
- 1 Teaspoon Vanilla
- 1 Teaspoon Ground Nutmeg
- 1 Teaspoon Cinnamon
- 1 16 ounce can unsweetened pumpkin
- 3 eggs
Mix the cake mix, eggs, and one stick of melted butter to a large mixing bowl. Mix on medium speed until the ingredients are combined.
The mixture will thicken and form a ball. Once the ingredients are well combined, press the mixture into the bottom of a lightly sprayed casserole dish.
In a large mixing bowl, combine the eggs, vanilla, and a second stick of butter, melted.
Add the cinnamon, ground nutmeg, and confectioner's sugar. Freshly ground nutmeg adds an especially rich and layered flavor to this tasty pumpkin bar recipe.
Add the pumpkin, the softened cream cheese and mix the ingredients well until thoroughly combined.
Pour the filling over the crust and bake at 350 degrees for forty five minutes.
