I love to have my kids help out in the kitchen so simple recipes and easy to assemble items are a favorite on party days. There are so many great cake mixes sold at the grocery store so why reinvent the wheel? Use what is already done for you and put your own spin on it. These surprise cupcakes were a hit at our Last Splash Pool Party and were so much fun to make. Just start with your favorite boxed cake mix and add in some fun!
- White Cake Mix
- Oil
- Egg Whites
- Water
- Frosting
- Sprinkles
- Chocolate Candies
- Shark Pops
- Mermaid Gummies
Make your cupcakes according to the directions on the box. Add in some bright blue sprinkles and stir gently.
Line a muffin tin with watercolor cupcake liners. Pour the batter into the cupcake liners and bake. Set aside to cool.
Once cool, use a small knife to cut a hole into the center of the cupcake about halfway down. Set the top aside to use later. Fill the cupcakes with aqua chocolate candy. Slice some of the cupcake top off and slide it back on top of the chocolate candy like a little trap door.
Once your cupcakes are filled it is time to frost them.I like to use frosting bags with a tip to create a wave look. Once your frosting is on you can add your decorations. For this party I used gummy mermaids with shimmery sprinkles and shark pops surfing the frosting waves.
I love this recipe because it's so simple and kids can truly help you create the finished product. So get those kids in the kitchen and have them help make some surprise cupcakes for your next pool party!
