When it comes to desserts for kids’ Easter parties I love recipes that are super simple, but have a big dose of fun. These no bake mini Easter egg nest cakes fit the bill! Made with store bought angel food dessert cups and frosting, this Easter recipe couldn’t be easier to make. I made a platter full of these for the Peanuts® Easter Party we held in our backyard. They were a huge hit!
- Angel Food Dessert Cups
- Store-Bought Frosting
- 1 c. of Shredded Coconut
- Green Food Coloring
Color the shredded coconut by adding 1 cup of coconut, a drop of water, and a couple drops of green food coloring to a container with a lid (a mason jar works great for this). Give the container a good shake until the coconut is evenly colored.
Spread frosting in the center of each angel food dessert cup.
Sprinkle the green coconut on top of the frosting to fill the cup.
Finish by placing a few malted milk eggs or Easter chocolate candy on top of the coconut.
