- Prepared Vanilla Cake Mix
- 2 drops Coconut Extract
- 1 c. Miniature Marshmallows
- 1 - 2 c. Shredded Coconut
- 3 c. Vanilla Frosting
Prepare the cupcakes per box instructions. Bake in Rudolph the Red-Nosed Reindeer® Christmas Cupcake Liners as directed. Once the cupcakes are cooled, mix vanilla frosting, marshmallows and 2 drops of coconut extract in a small bowl.
Spread frosting mixture on top of the cupcake, making a mound of frosting.
Cover frosting with shredded coconut. Using your hands, shape frosting into a ball, adding more coconut as needed.
