Potato salad is my family's all-time favorite thing to bring for BBQs, picnics and family get-togethers. Even growing up, my Mom always made her delicious salad for us to enjoy regularly. So, naturally I often use her recipe for our parties and celebrations. That's why I'm excited to share it with you. This recipe is super easy to make and can be made with almost any kind of potato. I prefer red or russet potatoes, but it can be made with any potato variety. You can also substitute dill pickles with sweet pickles if you want to change it up a little and make it your own!
- 4 lbs. Potatoes (Boiled and Chopped)
- 1 1/2 c. Mayonaise
- 1 t. Mustard
- 1 1/2 c. Whole Black Olives
- 1 c. Diced Celery
- 1/2 c. Diced Pickles
- 1/3 c. Shredded Carrots
- 1/4 c. Chopped Green Onions
- Salt and Black Pepper to taste
Start by washing the potatoes thoroughly. Cook in a large pot with boiling water until tender. Refrigerate for 30 minutes or until cooled, then chop.
Dice the celery and pickles, chop the onion and shred the carrots. Place all of the ingredients in a large mixing bowl.
Mix well and season with salt and pepper to taste. Refrigerate for 2-3 hours.
